Domaine de la Motte, Chablis Vieilles Vignes - A lovely wine from hand-picked Chardonnay grapes. Bernard Michaut's winery is small but perfectly formed. Following a 1m euro investment finalized in 2005. They now produce very consistent top-flight Chablis. Low yielding vines grow on north facing kimmeridgian and chalky clay soils surrounding the village of Beines. From here Bernard selectes parcels with an average age of 40 years for his Chablis Vieilles Vignes. After slight maceration and gentle pneumatic pressing the wine is racked (for 24 hours) and fermented in oak barrels for 15 days. The wine is then transferred to steel tanks for the malolactic fermentation. The perfect match for Burgundian cheeses, such as Epoisse and Soumaintrain. |
