Clos de Nouys Vouvray Sec - This rich, honeyed wine is a dream. On the palate it shows light, nutty and apricot flavours, which are balanced by good acidity and a crisp, clean finish. The vineyards lie on chalky clay soils. Vines are green harvested and leaf canopy is thinned. All harvesting is done by hand. Grapes are pressed for 3 hours and the wine is fermented in barrels of 225l and 400l using natural yeasts, with regular stirring of the lees in barrel. Ideally matched with grilled fish, seafood and summery poultry dishes. |
