Duc de Morny, Picpoul de Pinet, Cave de l'Ormarine - Terrific white wine made from the local Picpoul grape. Floral and enticing on the nose, exuberantly fresh, subtle, fine and long on the palate. Oh yes!
Picpoul de Pinet is a tiny appellation in the commune of Hérault. Cave de l'Ormarine's vineyards lie at apporoximately 40 metres above sea level on a chalky clay plateau, rich in cretaceous limestone and loaded with quartz gravel chippings.
Picpoul grapes are carefully selected, de-stemmed and macerated on their skins. Racking lasts for 24 hours, followed by a fifteen day fermentation during which malolactic fermentation is blocked. The wine is fined and filtered before being bottled in the traditional fluted bottle.
Pair with oysters, mussels or bouillabaisse.
