Amarone della Valpolicella Classico Capitel della Crosara - A generous, classically-styled Amarone with great concentration and texture. The wine is rich and very smooth with an earthy nose showing hints of violets, blackberries and mint. The palate is full-bodied and smooth with hints of raisin and a long, complex finish underpinned by notes of tangy cherry and liquorice. A real biggy!
The grapes are destemmed and air dried in wooden racks until February of the following year when they are crushed. The must is fermentated in stainless steel vats for 4 months ensuring rich extraction of tannins, fruit and colour. The wine is then matured in oak for 3 years.
Drink with game such as venison, top quality beef, roast lamb and mint or mature Parmigiano-Reggiano cheese.
