Prophet's Rock Pinot Noir, Central Otago - This tiny producer in Central Otaga makes outstanding Pinot. This stylish wine shows rich berry, cherry, floral and spice aromas giving way to a smooth, dense palate. It has a really silky texture, fresh acidity and a long rich finish typical of the region’s distinct style. The fruit for this wine was 100% destemmed with a high proportion of whole berries going into the fermenters. After an extended cold soak, fermentation started with indigenous yeast. The wine was hand-plunged only and after fermentation was racked to barrel. It spent fifteen months in French oak barriques from various Burgundy cooperages and forests, with 35% new oak. The wine was bottled unfiltered under premium quality cork. Prophet’s Rock is a newcomer to the burgeoning Central Otago wine scene, and since its début 2005 vintage this small winery has been making big waves. Its twin secrets of success are superbly located and lovingly tended vineyards, and the talents of winemaker Paul Pujol. Having made wine for top estates in New Zealand, Alsace and Oregon, he is ideally placed to deliver world-class Pinot Noir from this exceptional fruit.
