Chateau Pineraie Cahors Tradition - Jean-Luc Burc's estate, located near Puy-l'Eveque in the north-west of the Cahors region, has recently been elevated to Château status. By introducing 15% Merlot to blend with old vine Malbec, he produces a style of Cahors with elegance and finesse. It has subtle tangy red fruit flavours such as redcurrant and cranberry, undertones of earth and ripe red cherries with some sweet liquorice on the delicate long finish.
'Our vineyard has the originality to contain into its 37 hectares all the types of soil that makes the Cahors. On the terraces of the Lot, the vineyard is made of subsoil composed of old alluvium and limestone plateau with clay and marl. Composed of 85% of Auxerrois and 15% of Merlot, the vine stocks of the Pineraie are on the 2nd and 3rd terraces and on the limestone plateau. A dozen hectares are placed on the commune of Lacapelle Cabannac. The lower parts of the vineyard are clay while the higher parts are clay, limestone and hard flint. Yield is set for each patch to get ripe and healthy grape, thus getting the best from the land. We especially care about the quality control, that's why we chose reasoned agriculture. Pesticides are applied according to a weekly statistical parasite count and weather forecast. Thinking the quality means protecting nature and the health and the security of people. One vineyard, 3 wines - Chateau Pineraie is hand sorted according to very strict specifications. It is aged 12 months in oak barrels. It is made of 85% Cot and 15% Merlot, this wine contains all the specificity of the Cahors. It is aged in order to obtain soft tannin, with a productivity of about 4,500 liters per hectare'
The vines, including some very old Malbec, are planted in clay-limestone soil which helps to keep yields naturally low. Fermentation is controlled to 30 degrees with maceration on the skins from 2 - 3 weeks, including frequent pumping over and aeration. The wine's then aged for one year in wood, 30% of which are new barrels. It's only lightly filtered before bottling to preserve fruit quality and character.
Drink with red meats or pork in wine, cream or even peppercorn sauces and game, but also mature hard cheeses go nicely too.
