Shake hands with Francis Tribaut, owner and winemaker of Champagne Lallier, and you are instantly electrified by his enthusiasm for his wine. His ancient winery and cellars are based in Aÿ which are just 5km in reality but a million away in spirit from the pomp of ‘disneyland' at nearby Epernay)
All his wines are classified Grand Cru or Premier Cru. His cellars date back to the 18th Century and are older than his most famous Aÿ based neighbour, Bollinger. Francis follows winemaking practices the larger houses wouldn't dare risk - such as not using any Pinot Meunier (which ages faster) and using only the natural yeasts of each terroir (to express the individuality of each Grand and Premier Cru vineyard).
Each style of wine is carefully crafted and this is no more in evidence than with Champagne Lallier's prestige cuvée - Zéro Dosage. Zéro Dosage is the result of a ‘happy accident'. Based on the splendid 2002 vintage, sourcing 70% Pinot Noir from the Grand Crus of Aÿ and Verzenay and 30% Chardonnay from the Grand Crus of Avize and Cramant, the ever curious Francis decided to use cork, not a crown cap (the common way of sealing bottles for maturation in the cellars). During the pre-release tasting Francis was amazed at the aromas and flavours - which needed nothing added - so he decided not to dosage and a new cuvée was born.
Only 333 cases of this very limited prestigious wine have been produced.
